Jamaican star fruit
Star fruit, also known as Carambola, is a tropical fruit native to Southeast Asia but is now grown and enjoyed in various parts of the world, including Jamaica. It gets its name from its distinct shape when sliced, which resembles a star. While in Jamaica, you may also hear locals calling star fruit ‘Jimbilin’.
Star fruits are about 3 to 6 inches long and have vibrant yellow or greenish-yellow smooth and waxy skin. When ripe, the star fruit has crispy and juicy yellow flesh. The flavour of star fruits is similar to green grapes, with a delightful balance of sourness and sweetness. Enjoy the star fruit as it is without removing any parts; the skin and seeds are perfectly edible.
Is star fruit good for juicing?
Star fruit is excellent for juicing! You can enjoy star fruit juice alone or combined with other fruits. Star fruit is rich in vitamin C and other beneficial nutrients, making it a healthy juice choice.
Prepare a delightful glass of star fruit juice effortlessly in minutes. Gather a handful of star fruits with a few ingredients you probably already have at home.
Star fruit juice recipe
- Star fruit: Use a mix of very ripe star fruit and not-so-ripe ones to blend the sweet and sour flavour. If you find star fruit when not in season, they tend to be very sour, so go for the very ripe ones.
- Ginger: Only use a small amount of ginger. You don’t want to overpower the start fruit taste. The star fruit juice should hit the ginger flavour.
- Lime: Sometimes you may find very sour star fruits. If this is the case for you, reduce or remove the lime juice. Use a small amount of lime juice when the star fruits are sweet. Since the star fruits have a tangy taste, this recipe requires little lime juice. For those who can’t find lime, you could replace it with lemon, but keep in mind that lime and lemon have slightly different tastes.
- Sugar: I’m using brown for the recipe below, but use whatever sweetener you like.
How to make star fruit juice
- Clean star fruit: You want to thoroughly wash the ginger and the star fruit to remove dirt. Peeling the ginger is up to you. I rarely ever peel ginger when I use it in making drinks. When washing the star fruit, get into the area around the stem because dirt and other unwanted particles may get stuck there.
- Blend: Chop the star fruit and the ginger into smaller pieces your blender can handle. Add the chopped starfruit and ginger to the blend with enough water to cover the fruit. Depending on your blender size, you may have to blend more than one batch. Blend until smooth, then strain using a sieve or a cheesecloth. If you own a juicer, you could juice the star fruit and ginger instead of blending, producing a richer drink, but you will need more star fruit and ginger.
- Sweeten: I only ever use sugar as a sweetener for this drink recipe, but I would not dispute other types of sweeteners. Even though I used brown sugar, you can choose to use granulated sugar. Add the lime juice (or lemon if you don’t have lime) and sweeten with the sweetener of your choice.
Star fruit combination
Combine starfruit with a variety of fruits for delicious juice blends. Pineapple adds tropical sweetness, mango brings richness, orange provides vibrant citrus flavours, strawberries offer a hint of berry, and watermelon brings subtle sweetness. Experiment with different proportions to create your perfect blend.
Refrigerate and preserve star fruit juice
To refrigerate and preserve star fruit juice:
- Transfer it to a clean, airtight container with tight lids.
- Seal the container well to minimize air exposure.
- Refrigerate the star fruit juice for up to a week but consume it within 3 to 4 days for optimal flavour.
- Shake or stir before serving to mix any sediment that may have settled.
- 1.77 kg (3.9 lb) star fruit
- 37 g (1.31 oz) ginger
- 199 g (0.9 cups) brown sugar See notes
- 1 tbsp lime juice
- 1.16 l (4.9 cups) water
Wash to remove any dirt from the star fruit and ginger, then chop into smaller pieces.
Add the ginger and star fruit to a blender with water and blend until smooth. Depending on the size of your blender, you may have to blend more than one batch.
Strain using a sieve or a cheesecloth. Cheesecloth is best to keep things more tidy.
Add the lime juice and sweeten with sugar. Put to chill or serve over lots of ice.
- When washing the star fruit, make sure the clean around the stem area.
- Use both the juicy yellow start fruit and the greener ones. The yellow start fruits are sweeter, and the greener ones have a tangy-sour taste, which combines to give the drink a nice flavour.
- I used brown sugar, but you can use granulated sugar.
- If you can’t get lime, use lemon.
